What do you think about my plan?

I am going to build a 4 rack system that is going to hold 4 55 gal tanks. I am planning to buy 6 2.5" discus and 4 different varietys sets. So 6 one set, 2, 3, and 4. I am going to put 2 4"x4" sponges in each tank and a 300 watt heater. I will hold 2 55 gallon Plastic aging drums with heater in each, I am going to supply the water to the 55gallons tank using a pump. I am planning to do 20% water changes a day. I am going to grow this fish to breeder size. What do you think about this setup?

Should be fine, i'd up the changes 25-30%/DAY to maximise growth as a 55gal is only big enough for 5 adults but still should work great

What other types of filters do you think I need per tank? How sure should I feel about getting at less one pair out of each tank?

From 6 your guarenteed to get atleast 1 pair, 2 in most tanks is much more likely, with good sponge filters and around 400l/h of air being forced through them filtration should be fine, if you were really worried you could have a large box filter full of bio chem zorb or purigen on hand but i dont think you'll need it.
