I am about to make up a batch of beef heart, when I was at the supermarket they had a heap of other stuff such as beef liver, beef kidney ,beef cheeks . My question is can you add these other cuts to your mix or should you keep it simply beef heart and if so why ?

I do not like liver or kidney as it fouls the water very easily. I am not sure about beef cheeks but heart is pretty cheap and very lean as it is all muscle hence the reason for using it.

Maybe others will have different reasons for using it or not.

The best thing about heart is that its VERY LOW in fat, other cuts will have more fat running through them.
