They will go into my 75gal tank.
Should I have no gravel?

Two cm discus are very very tiny. They would hardly have even developed their round shape at that size. Probably still an elongated shape.

I have to say, it's a big risk. First of all you really need to see a photo of the actual fry, not just the parents. Shipping such tiny fish is a real danger.

Ammonia builds up in shipping bags over time, and any form or ammonia will quickly kill young fry. If they have to be in the bags more than a couple of hours, I wouldn't be willing to buy them.

Shipping is pretty hard on any fish, but tiny fish don't cope at all well. I think you may end up with a bag full of dead fish, or at the very least, sick fish.

Juvenile fish are very difficult to raise, even for an experienced discus keeper. You would be better getting something no smaller than 5 cm (not including tail) to go into your 75 gallon tank.

Breeders keep fish that tiny in smaller tanks so they can find the food, with constant water changes to keep the water pristine. Feeding 6 times a day is also necessary with tiny fry.
